Borowiki Mushrooms
Borowik / Borowki are the most highly-regarded edible Polish mushroom. Borowiki are large, round, tan to brown mushrooms with a swollen white stem and fleshy, broad cap. Borowiki mushrooms can be found throughout Poland. Many Poles journey out into the forests to collect Borowik when in season and dry them for later consumption. Borowiki are a key ingredient of Polish Bigos (Hunters' stew), mushroom pierogi; and an essential part of Polish Christmas Eve (Wigilia).
